You can use the created Size Curves in your Assortment Plan as Size Scale.

Follow the instructions to create a Size Curve as described in this article.

Then your created Size Curves will show up in your Size Scale under Assortment Plan.

Select the a Size Curve from the options and you'll see that this size curve will apply to the Size Scale when you right click and select Manage Spreads.
